This is my first attempt at pudding. That too a strawberry pudding without eggs. Most important is besides me, my family, guests they all loved this Strawberry Pudding. Got over (: as soon I made them. Hmmm although I have kept a little morsel of strawberry pudding aside for me. I really marvel at this Strawberry Pudding. I have adapted from a very old cookbook given to me by my aunt. The pages are torn I couldn’t understand who the author is. Irrespective whoever the author or authoress is I am thankful to them!
The best part of this Eggless Strawberry Pudding is its low carb, Low cal, fat free. Great for weight watchers. It is not like steamed pudding which you can eat instantly. You have to refrigerate this pudding for several hours before it sets. In the book it is only consisting of strawberries. However to make it richer and healthier have added some dry fruits.
I had made these Eggless Strawberry Pudding yesterday. I was eagerly waiting to taste them today. Nice dark red color with slimy texture. You could top this pudding with ice cream or fruit. Strawberry Pudding tastes amazing. I added more sugar as the strawberries were not so sweet. If the strawberries are sweet no need to add sugar.
You could also call it as a vegan strawberry pudding. As I haven’t used milk or cream. It is only made up of fresh strawberries, water, sugar, corn starch, cocoa and dry fruits are optional. So made only with 5 ingredients.
This Pudding is simple and easy to make. Even bachelors, children, beginners can make them. You could prepare it one day in advance if you are getting guests at home next day. This Eggless Strawberry Pudding is refreshing, light and filling.
Total Time: 30 mins (5 to 6 hours for refrigerating)
Serves: 7 to 8 People unless all are strawberry lovers
Ingredients:
- 1/2 cup Corn Starch (Corn flour mixed with water)
- 2 tbsp Custard Powder (Optional)
- 2 cups Fresh Strawberries
- 3 cups Water
- 2 tbsp Cocoa Powder
- 1/2 t/s Salt
- Sugar as required
- 4 tbsp Dry Fruits (Almonds, Cashews, Walnuts, Raisins) – Optional
Method:
Mix corn flour with cocoa powder along with water and keep aside. Cut fresh strawberries into 2 halves.
Take a pan or wok with water on low flame.
Put chopped dry fruits in that if you wish to. Once the water is hot and starts bubbling.
Add sugar and strawberries to it. Keep it covered or open until strawberries plump up. Once they are soft mash them with help of back of the spoon.
Take custard powder in a small bowl with some hot water. Stir well and add into the strawberries. Keep stirring this mixture on low flame.
Now also add corn flour-cocoa paste to it.
Combine all of them well and keep stirring.
After few minutes the mixture will thicken and start firming.
The texture won’t be like steamed pudding.
This would be slightly slimy and soft. Pour this batter into a mold. I have used a heart shaped mold.
Also a cup cake mold.
Refrigerate for several hours or until properly set. Garnish with chocolate syrup.
You could also scoop some ice cream on it Or put shavings of chocolate on them!. Serve Eggless Strawberry Pudding chilled!
Tip:
- You could make this pudding from any berries.
- If you want pudding more thicker add more corn flour.
- Also I have tried freezing the pudding. You can say I am mad but love to experiment with food. Also frozen pudding also tastes yum just like a sorbet.
