Kotimbhir Vadi a classic Maharashtrian dish 🙂 yummy, crispy and perfect tea time snack ! Kothimbir means coriander leaves and vadi means the batter is steamed and then fried as fritters. So Coriander + Fritters = Kothimbir Vadi 🙂  We liked them back home so much that I am longing to make more of Kotimbhir Vadi.
The exterior of Kotimbhir Vadi is crispy and interior is soft, yummy and tasty. One cannot express it make yourself and serve hot with dry garlic-coconut chutney Or tomato sauce with  a hot cup of tea. I am feeling hungry again as it’s tea time for me and today no Kotimbhir Vadi (:
Just munching some lays as I made a beautiful cake today. I am still figuring what cake it has to be called? Anyways I will do that soon.

Kothimbir Vadi step by step details follow:
- Combine all the ingredients except oil in a mixing bowl. Ensure all is mixed well and the batter is smooth. The consistency should be thick and not thin.
2. Now take a microwave bowl. Pour the batter into it. Microwave on high power for 3 to 4 mins Or until a skewer comes our clean.
3. Allow the steamed cake to cool down. Slice into diamond Or square shape.
4. Place oil in a kadhai Or frying pan. Add oil and place over medium heat. The oil should be nicely hot. Reduce the flame. Deep fry the squared cakes until golden brown. Fry 3 to 4 at a time.
5. Serve kothimbir vadi hot with green chutney Or sauce.
Kothimbir Vadi recipe details and  printable version below:
- 2 cup oil for frying
- 1 cup chopped coriander leaves
- 1 1/2 cup gram flour (besan / chickpea flour)
- 1 and 1/4th cup water
- 1/2 t/s turmeric
- 1 tbsp red chili powder
- 1/2 tbsp ginger-garlic paste
- 1 tbsp poppy seed
- 1 tbsp white sesame seed (til)
- 6 to 7 crushed peanuts
- a pinch of hing
- 1/2 tbsp coriander seed powder
- salt as per taste

Thanks so much for clarifying :)..had one more doubt..by microwave in high power, do you mean convection mode? can you give the approx temperature if possible?

Divya microwave means to microwave for a minute it’s not the convection mode its a microwave mode which you use for reheating food . Hope this help’s you thanks.

Your post remembered my Mammas vadi, need to make it for todays dinner, yummy and one thing maria I think you have missed the measurement for coriander leaves as it says cup chopped coriander leaves.
I would request you to make Bature with Yeast please, as i had tried earlier and it was a disaster.
