Mix Vegetable Curry (Quick & Healthy)

Easy mix vegetable curry recipe made in pressure cooker. This is a one pot comfort meal which could be conveniently made when you are in a rush. Tastes best with steamed rice or jeera rice goes well with pav (bun) and rotis too.

Mix Vegetable Curry (Quick & Healthy)

I always made veg curries of various types home as this way my hubby tend to eat veggies. So come up with my own variation of veg curries. This happens to be a regular vegetable curry made with bhuna masala. I have used home-made bhuna masala but you could use ready made too.

This recipe is made with basic ingredients found in your kitchen. I have used carrot, green peas, potatoes but you could use any veggies of your choice. Also for better flavor and taste I have made them with butter but you could use oil instead.

Addition of pav-bhaji masala always gives a great taste to your veggies, pulav’s or curries. You could also use tomato puree but I prefer chopped tomatoes for such curries. To give some more tang I have used yogurt for marinating the veggies.

Alternatively you could use a pan to make this but would take longer time to cook than veggies. The taste of this curry is little spicy, tangy and flavorful.

Let’s make Mix Vegetable Curry Recipe:

1. Firstly beat curd with all the spice powder and until smooth.

2. Marinate potatoes, carrots, green peasย into the beaten yogurt mixture. Marinate for 10-15 mins.

3. Heat butter or oil in pressure cooker or pan. Add cumin seed, caraway seed and black cardamom. Saute until they crackle.

4. Add cloves and bay leaf. Saute for 30 secs.

5. Now add onion and saute until they change color to light brown.

ย 6. Time to add ginger and garlic paste. Saute until the raw smell diminishes from them.

7. Put chopped tomatoes or tomato puree.

8. Saute for a minute and add all the spice powder. Also add the bhuna masala paste.

9. Give a nice stir and fry until tomatoes appear tender.

10. Put the marinated veggies with the rest of mixture.

11. Add water and salt as desired. Pressure cook until 3 whistles. Switch off the gas.

12. Once cooker cools remove the lid. Garnish some coriander leaves and kasuri methi.

13. Mix all nicely. Check the taste and alter any spices if required.

Ingredients
  • [b]For marination:[/b]
  • 2 tbsp yogurt
  • 1 tbsp kashmiri red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander seed powder
  • 1 tsp garam masala powder
  • 1 tsp amchur powder
  • 1 tsp sugar (optional)
  • salt as per taste
  • [b]for veg curry:[/b]
  • 2 tbsp butter or oil
  • 1 tsp caraway seed
  • 1 tsp cumin seed
  • 1 black cardamom
  • 2 inch cinnamon stick
  • 1 bay leaf
  • 3-4 cloves
  • 1 stoneflower
  • 1 cup onion julienne
  • 1 tbsp garlic or paste
  • 1 tbsp ginger grated or paste
  • 1 cup tomatoes chopped thinly lengthwise or tomato puree
  • 1 tsp garam masala powder
  • 1 tsp pepper powder
  • 1 tbsp pav bhaji masala
  • 1 tsp roasted cumin powder
  • 1.5 tbsp [url href=”https://www.flavorsofmumbai.com/bhuna-masala-recipe/” target=”_blank”]bhuna masala paste[/url] (home-made or canned)
  • 1 /2 cup green peas (fresh or canned)
  • 1/2 cup chopped carrot (peeled and chopped into cubes)
  • 1 cup chopped potatoes (peeled and chopped into squares)
  • 2 cups water or as required
  • 1 tbsp chopped coriander leaves
  • 1 tsp dry fenugreek leaves (kasuri meti)
  • salt as per taste

Notes

    In this earlier posted recipe, the vegetables were fried. But in the current recipe, the vegetables are not fried. The vegetables are cooked in their juices . This takes a little longer but the result is great. I often make this when i wanna have some thing comforting with chapatis.
