Easy and Simple recipe to make Tuna Fish Cutlet !
First time ever I seen Tuna fish in the market. Thanks to my friend who showed me how this fish looks like. I had seen tuna only in canned tins and subway sandwiches. I was quite excited to bring this fish home. Also all the more excited to make a innovative dish with it. So came up with this recipe and thankful to my friend to show me Tuna fish else wouldn’t had known what Tuna looks like 😉
Some information on Tuna Fish- It’s dark greyish-black in color is long and size is similar to king-fish. When you touch them it should be firm and not soft. Lot of recipes like Tuna salad, tuna fry, etc are made from Tuna fish.
Back in Goa fish cutlets are made in every household. Mostly cutlets are made from shrimps, small prawns, shark, mackerels Or any fish fillet. Mostly cutlets are mixed with potato, some spices, given egg wash then rolled in semolina and deep fried. Today’s recipe is slightly different instead of potatoes have used whole wheat bread, gram flour. Also no egg wash just rolled them in rice flour before shallow frying. This process helps in less oil consumption.
Tuna Fish cutlet is low-fat, healthy, delicious and great for side starters. You could make the mixture for cutlet in advance and place it in the fridge. Thaw for some time then shape them into thick rounds and shallow fry them.
These cutlets can be used for burgers, sandwiches, snacks and starters. They taste good either ways. If you don’t get Tuna fish you could use any fish like mackerels, king-fish, shark etc.
Tuna Fish Cutlet step by step details below and detailed recipe at the bottom of the page…
Firstly boil whole tuna fish in 2-3 cups water with salt and turmeric powder. Boil for 20 mins until fish is tender.
Allow the fish to come to room temperature. Gently remove the skin and peel off. You could take help of knife. Now shred the boiled tuna fish with your finger. Alternatively you could chop them finely.
Take a pan add 1 t/s oil to it. Saute onion and green chilies until onion changes it’s color.
Time to add tomatoes. Also add dash of turmeric powder, red chili powder, coriander seed powder, sugar and ginger-garlic paste.
Saute until tomatoes are cooked and dried up. Now mix this with the shredded tuna.
Immerse whole wheat bread into little water. Don’t keep for a long time else the bread will become soggy and difficult to manage. Just soak and remove. Squeeze all the excess water with the help of your palm. Add soaked bread into the tuna mixture.
Also add besan and salt. Combine all nicely and evenly.
Make round tikki like shape for cutlets. Spread rice flour over a dish. Roll cutlets over rice flour.
Take a shallow frying non stick pan with oil. Once oil is hot shallow fry the cutlets until dark golden brown from both the sides.
Serve the tuna fish cutlets with french fries and some salad.
Notes for Tuna Fish Cutlet:
- You could deep fry the cutlets also if you wish.
- It’s important that tomatoes are dried up before adding it to tuna mixture. Otherwise the mixture would be soggy and won’t hold proper shape.
- I have given round shape to cutlets you could give any shape you desire like heart shape, roll shape etc. Just ensure the mixture has a good binding.
- If the mixture is still wet add little more besan to it.
- Also it’ important to squeeze the excess water from the bread before adding.
- While shallow frying ensure the heat is medium else the cutlets might get burnt.
Tuna Fish cutlet detailed recipe listed below:
- 2 tbsp oil for shallow frying
- 1 kilo tuna fish (boiled, peeled and shredded)
- 2 cups water
- 1 tbsp turmeric powder + 1 t/s turmeric for mixture
- 2 medium sized onion chopped finely
- 3 green chilies chopped finely
- 1 tbsp ginger-garlic paste
- 1 tbsp garam masala powder
- 1 t/s coriander seed powder
- 1 t/s red chili powder
- 1 t/s sugar
- 3 tomatoes chopped finely
- 4 whole wheat bread Or plain bread
- 2 tbsp gram flour / chickpea flour (besan)
- 2 tbsp rice flour
- rock salt / salt as per taste
