Eggless Banana Cake recipe is eggless and vegan too! For some reason I love eggless cakes as I am not too fond of egg odor in the cakes. This recipe is easy and could also be called as low fat banana cake.

Bananas were over riped so baking cake was the best option. Over ripe bananas have some great health benefits it fights cancer, curbs indigestion and great to make dessert 😉

My hubby loves banana cakes so this was made specially for him. He gulped down half of the cake as soon as it was baked. He didn’t even realized it was an eggless cake.

The texture of the eggless banana cake is soft, spongy and also nutty. I have added some pecans, pistachios and cashew but nuts are optional. The recipe is so easy even a kid could make easily under supervision.

The cake was loved by hubby as well as his office mates. I loved them too. You could eat the cake as it is or even frost with cream or chocolate.  I would just slice the cake and eat with a hot cup of tea or coffee.

Let’s make step by step Eggless Banana Cake Recipe!

  1. Preheat the oven to 180ºC fifteen mins before baking. Mash the bananas with a fork or finger.

2. Mix the powdered sugar, oil and vanilla essence.

3. Sift the flour, corn flour, salt and baking powder.

4. Fold the sifted flour into the wet ingredients.

5. Lastly add the coarsely chopped nuts.

6. Mix vinegar and coking soda into a bowl. Add to the mixture and mix nicely. Add the cake batter to a greased loaf pan. Bake in a preheated oven at 180ºC for 50-55 mins or until the skewer comes out clean.

7. Allow the cake to cool down unmould the cake. Slice and serve warm or cold.

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • ½ cup sunflower oil
  • 5 over ripe bananas
  • 2 cup of flour (used wheat flour and refined flour into 1:1 ratio)
  • 1 cup sugar (I used powdered sugar)
  • 1 tbsp vanilla essence
  • ½ cup coarsely chopped nuts ( used pecans, pistachios and cashews)
  • 1 t/s baking powder
  • ½ t/s cooking soda + 1 tbsp vinegar
  • 1 t/s salt
  • 1 tbsp cornflour
How to make the recipe?

Notes
1. The temperature for all oven are different. So baking time may vary so bake for more time if it's still moist.
2. Adding nuts are optional but it does give a nutty flavor to the cake.
3. If you want to use butter you may use butter instead of oil.
4. White vinegar or coconut vinegar would be ideal for this cake.
5. You could use refined flour or whole wheat flour for this cake.
6. Also instead of vanilla essence you could add cinnamon powder.

      Vijaya I have used 5 small sized elaichi bananas or 3/4 cup mashed bananas, hope this resolves your query.

    Hi,

    I followed it word by word and it came out nice, but not that soft and spongy. Not sure what I did wrong, how long should we fold it? Also I did it in a Microwave in Convection mode (no pre-heat options there).

      Subrat preheating makes a lot of difference. Secondly you should not fold too much otherwise the cake won’t rise. hope this helps you.
