Banana Chocolate Cake (eggless)

Eggless banana chocolate cake recipe with step-wise instructions. For some reason we love eggless cakes and if they consist bananas its some extra brownie points earned 🙂  Also to make it low fat haven’t added butter used oil instead. But yes have added little bit of cream as cream gives a crunchy effect to cakes.

Banana Chocolate Cake (eggless)

This cake always comes out soft, moist, spongy and with a great texture. Love adding walnuts with bananas guess they kind of marry well with each other.

I have tried eggless cakes with many replacement. But my personal favorite of eggless cakes are with sweetened condensed milk. Reason being they give a lovely texture and taste to the cake. Secondly I don’t have to beat sugar or use sugar so less work for me 😉

With my experience whenever you add a dash of cream specially in eggless cakes they give a nice crunchy exterior to your cakes. Even sprinkling of sugar on the top gives a crunchy cake. It’s like a crunchy bite of cake going to the soft spongy cake.

To make a chocolate cake with bananas have used Hersheys’ cocoa powder. Also added coffee powder for the extra boost and flavor in the cake.

Eggless Banana Chocolate Cake Recipe

Let’s make Eggless Banana Chocolate Cake Recipe stepwise:

1. Sift flour, cocoa, wheat flour, salt, coffee powder, corn meal, baking powder and baking soda.

2. Combine mashed bananas and cream. Beat manually or with the help of electric beater until they are mixed well.

3. I whisked mine manually.

4. Add the sweetened condensed milk.

5. Mix all nicely.

6. Add oil and mix again. I almost forgot oil and thankfully added them 😉

7. Gradually fold dry ingredients into batches of two. Don’t over beat the mixture.

8. Preheat oven for 15 mins before baking at 180ºC. Grease the loaf pan and dust some flour over it. Pour half the cake batter on the greased pan. Spread some walnuts over.

9. Again pour all the rest of batter. Lastly top with rest of walnuts. Sprinkle sugar all over.

10. Bake for 45 – 50 mins or until the skewer comes out clean.

11. Allow the cake to cool down and gently unmould the cake.

12. You could refrigerate the cake.

13. Slice the cake and store them into an air-tight box.

14. Serve your eggless banana chocolate cake warm or cold. Top with a scoop of ice cream or hot chocolate sauce. Honestly we ate ours just the way it is.

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 150 gm all purpose flour
  • 2 tbsp wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp corn meal
  • 1 tsp salt
  • 3 tbsp heaped cocoa powder of any good brand ( I used Hershey's)
  • 1 tbsp instant espresso coffee powder
  • 4 tbsp banana puree or mashed bananas
  • 2 tbsp cream
  • 200 ml sweetened condensed milk ( I used Amul Mithaimate)]
  • 100 ml ricebran oil or olive oil or butter ( I used ricebran oil)
  • 1 tsp nutmeg powder
  • 100 gm walnut chopped coarsely

Notes
1. You could use cardamom powder instead of nutmeg powder.
