Banana Walnut Cake (eggless)

Easy eggless banana walnut cake recipe made with oil and no butter. Banana cakes are loved at our house be it with eggs or without eggs they are always in demand. To be honest this cake is spongy, soft, crunchy from our and has a great texture.

This time I thought of clubbing bananas with walnuts and they really go well. If you don’t like walnuts add pistachios, almonds, peanuts, cashews or no nuts if you allergic. But adding nuts gives a nutty flavor to your cake.

In-fact I wait patiently for the bananas to over-ripe for making cakes or muffins. Banana pulp are the best replacement for eggless cakes. Also I have just used 1/4th cup oil for this cake. But if you aren’t happy with oil then  just replace with butter instead. Also I have used condensed milk for this recipe.

Bananas is a versatile ingredient its used for so many desserts be it Indian or any other country. Also they are great for growing kids and also good for digestion process. But if you are already higher on calories then you should avoid or consume less of bananas.

Eggless Banana walnut cake recipe

Let’s make eggless banana cake with walnuts:

1. Mash the bananas with fork or just exercise your finger until they are mashed well.

2. Sift flour, baking powder, baking soda, corn flour, milk powder and salt.

3. Combine oil with condensed milk into a separate vessel. Mix nicely.

4. Now add mashed bananas.

5. Mix all nicely until all incorporates well.

6. Add nutmeg powder and vanilla essence and mix.

7. Now fold sifted dry ingredients into batches of 3 into the wet ingredients.

8. Pour the batter  half into the greased pans. Now spread some walnuts across.

9. Again cover the walnuts with the rest of cake batter. Finally top again with walnuts.

10. Bake in a preheated oven for 30-35 mins for 180ºC or until the skewer comes out clean.

11. Slice the eggless banana walnut cake warm or chilled.

Easy Eggless Banana Walnut Cake!
Ingredients
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 1 tbsp corn flour
  • 1 tbsp milk powder
  • 1/4th cup oil or butter ( I have used ricebran oil)
  • 100 gm condensed milk
  • 10 tbsp of heaped mashed bananas
  • 1/2 tsp nutmeg powder
  • 1 tsp vanilla essence
  • 1 cup walnut
Instructions
  1. Mash the bananas with fork or just exercise your finger until they are mashed well.
  2. Sift flour, baking powder, baking soda, corn flour, milk powder and salt.
  3. Combine oil with condensed milk into a separate vessel. Mix nicely.
  4. Now add mashed bananas.
  5. Mix all nicely until all incorporates well.
  6. Add nutmeg powder and vanilla essence and mix.
  7. Now fold sifted dry ingredients into batches of 3 into the wet ingredients.
  8. Pour the batter half into the greased pans.
  9. Now spread some walnuts across.
  10. Again cover the walnuts with the rest of cake batter. Finally top again with walnuts.
  11. Bake in a preheated oven for 30-35 mins for 180ºC or until the skewer comes out clean.
Notes
1. You could use any shaped pan or loaf pan. I have use detachable pans.[br]2. It’s important to preheat the oven for 15 mins at 180ºC before baking the cake.[br]3. Please don’t open the oven doors while cake is baking. Else your cake might sink towards the center.[br]4. Once your cake starts giving fragrance or starts leaving the edges of the pan or your toothpick comes out clean your cake is ready.[br]5. Lastly this cake tastes the best next day eat them warm or chilled.

    Something went wrong with mine, it was dry. Also what is the substitute for milk powder, can i use powdered sugar,

      Chaya milk powder is optional so skip it also was your cake baked dry or batter was dry. There could be many reasons like you must have over-beaten the cake batter, the proportion of ingredients must have been not appropriate, over-baked the cake, the baking powder/soda must be not proper.         Thanks for responding, i think my batter was dry, what should be the consistency, and how to adjust accordingly. Also how many cups of sugar should one add? Mine was not sweet at all.

          The cake batter has to be of medium consistency if the batter looks dry then add little milk. If the batter is runny then add some flour. if you are using condensed milk then there is no need to add sugar otherwise add 1/2 cup sugar or as required.

      Tanvi you could make in microwave but the texture would be different. It would look like a pudding texture or you could also bake in pressure cooker. Let me know if you need any more help.
