Masala Omelette recipe – a famous street food of Mumbai which is available at all corners, joints of mumbai even during wee hours of night . Masala Omelette is an Indian version where spices and herbs like onion, chilies, chili powder etc are used.

There are many version of omelettes available here as well as across the globe like frittata, stuffed omelette etc. Omelettes are generally eaten with pav check for pav recipe on the blog.

Omelettes are used in many recipes for stuffing like frankie, burger etc. Personally the smell of eggs put’s me off hence have used a secret ingredient which makes the omelette odorless. Let me reveal it have used turmeric powder which helps in removing the bad odour from egg.

Also how to make fluffy eggs is not known to everyone. So would share the process which aids the process of making fluffy eggs. This tip was shared by mom and thankful to her. As I have grown eating egg and seeing how my mom makes them.

I feel omelettes are special for single and bachelors. As it could be made easily and eaten at any hour of the day. Day before I slightly burnt one of my omelettes while watching t.v and gave it to hubby 😉

Let’s make masala omelette recipe step by step:

1. Break eggs into a big mixing bowl.

2. Add turmeric powder along some salt.

3. Give a nice whisk and beat the eggs about a minute with a fork or beater.

4. Time to add milk, pepper and give a nice whisk again. By the way milk also helps in making omelettes fluffy.

5. Now add chopped chilies, ginger, onion, coriander leaves if using, pepper powder. Combine all nicely.

6. Take a frying pan add oil plus some butter. Allow it to get hot.

7. Now add half of mixture and place gas on high heat for 10 secs. Reduce the heat and allow the egg to cook on medium heat.

8. You could cover your omelette at this point of time only for 45 secs. It’s optional to cover as it just aids in speeding up the cooking process.

9. Check if it’s done from one side , if not allow to cook more. I prefer my omelettes slightly brown and not yellow so cook it for some more time. Flip the omelette other side and cook uncovered. You could press the edges of omelette gently. Also you would notice your omelettes have nice and fluffy. Once cooked from both sides put the rest of oil.

12. Serve masala omelette hot with toasted bread or pav or roti. Repeat the same with rest of egg mixture.

  • 1 tbsp oil
  • 1 tbsp butter
  • 3 eggs (anda)
  • 1 small onion (kanda)
  • ½ inch ginger chopped finely (adrak)
  • 2 green chilies or red chilies (mirchi)
  • ¼ th cup coriander leaves (optional) kothmir
  • ½ t/s turmeric powder (haldi)
  • 2 t/s milk (optional)
  • salt as per taste

  11. Serve masala omelette hot with toasted bread or pav or roti.
Notes
1. You could use red chili flakes if you don't have fresh red chilies.
2. Ensure you don't place the gas on high heat else you would have burnt omelettes.
3. Adding milk is optional.
4. It's important to get your oil hot before adding the egg to make it fluffy.

    is it necessary to add milk to the omlet, can’t we substitute for any other dairy free product.

      Flavia you could omit adding milk to the omelette it just helps the omelettes to get fluffy.
