Mushroom Fried Rice (Step by Step)

Mushroom Fried Rice Recipe – Easy stir fried rice made in indo-chinese style in less than 30 mins. This is a healthy vegetarian option for quick meals or brunch.

Mushroom Fried Rice (Step by Step)

This recipe is easy to make with basic ingredients found in your kitchen. The only 2 other ingredients which you would need is celery and sichuan pepper. If you don’t have celery then skip it and instead of sichuan pepper you could use black pepper powder.

The main ingredient for this recipe are mushrooms. But along mushrooms you could add capsicum, french beans and greens of spring onion however they are optional. To give a some crunch in the rice have added some cashews again that’s optional.

We love all kind of rice dishes back home. Also all kind of chinese style rice is loved by hubby. We had clubbed our mushroom fried rice with veg manchurian.

You could use any long grain rice or basmati for this recipe. Rice has to be cooked first and them stir fried. If you have cooked rice in advance then it would merely take about 5 mins to make this recipe.

Let’s make mushroom fried rice recipe stepwise:

  1. Firstly cook the rice on pan or pressure cooker or microwave. Pour the rice on a colander. Strain the water and allow to cool.

2. Meanwhile heat a wide bottomed sauce pan with oil or butter add celery leaves then garlic and ginger. Saute on high heat. I haven’t used celery as wasn’t there at home.

3. Once the raw smell from ginger disappears add the cashew and whites of spring onion.

4. When the onion changes to pink color add the rest of diced veggies like carrots, french beans and capsicum. Toss and saute them on high heat. Keep stirring the pan.

5. Also add the mushrooms and keep tossing them on  high heat.

6. After 1-2 mins you would see the mushrooms sweating or leaving water.

7. Now add tomato sauce, pepper powder, soy sauce, vinegar, red chili powder, sugar, salt and sichuan pepper if using. Mix all nicely.

8. Finally add cooked rice and mix all gently. Else the rice might get mushy.

9. Lastly add chilies, cover the pan for a minute on low heat. Alternatively you could shake and stir the rice on high heat.

10. Switch off the gas garnish your rice with greens of spring onion.

Serve your mushroom fried rice with veg manchurian or any gravy based dish.

  • 2 cups of basmati or any long grained rice
  • 1-2 celery leaves (optional) ajmoda
  • 1.5 tbsp oil or butter
  • 1 tbsp ginger peeled and chopped finely (adrak)
  • 2 tbsp whites or spring onion or onion chopped finely (pyaz)
  • 1 tbsp garlic chopped finely (lehsun)
  • 12-14 cashew (optional) kaju
  • 1 tsp sugar (shakar)
  • ½ cup capsicum chopped or diced finely (simla mirchi) optional
  • ½ cup french bean chopped diagonally (optional)
  • 1 packet or 200 gms of button mushroom chopped into chunks (khumb)
  • ½ cup finely chopped carrot (gajar) optional
  • 3-4 green or red chilies chopped diagonally (hari mirch)
  • 1 tbsp tomato sauce
  • 1 tbsp fermented soy sauce
  • 1 tsp vinegar (sirka)
  • 1 tbsp sichuan pepper powder (optional) teppal
  • 1 tbsp pepper powder or as required (kali mirch powder)
  • 1 tsp red chili powder (lal mirch powder)
  • salt as required (namak)
How to make the recipe?

  10. Switch off the gas and serve your mushroom fried rice with veg manchurian or any gravy based dish.
Notes
1. always toss veggies on high heat for the crunch.
2. using nuts and other veggies are optional.
