Another quick meal Palak Paneer Paratha which in English will be known as Spinach Cottage Cheese Indian Flat Bread. Palak is spinach, cottage cheese is paneer and parathas are flat bread Indian style. Palak Paneer Paratha is healthy, wealthy and quite filling. Kids and adults who don’t like spinach make for them Palak Paneer Paratha. As they will like them and will not know what is there in it. Palak Paneer Paratha is full of protein, vitamin and rich in nutrients.

During meals I make quick meals for myself as I gotto blog do my house work + make lunch for myself. So I come up with unique ideas to make quick meals which are healthy and easy to make.
I made raisins icecream and I ate one bowl which resulted in cold (: so now I can’t eat anymore. Pune is quite chilled and I am a real freak to eat a chilled icecream in chilled weather 😉 Anyways I am planning to make something yummy tomorrow will keep you posted.
Let’s make palak paneer paratha step by step:
1. Combine all the ingredients except oil. Start kneading with full pressure until soft dough is formed. Don’t add too much water as the spinach will also leave some moisture along with yogurt. Add as much water as required.
2. Lastly add oil to bind the dough. Cover with a damp cloth and keep aside for ten mins.
3. Now shape into small balls. Roll with a roller into oval Or round shape about 3 inches.Place a pan over high fire. Once pan is hot place the rolled paratha.
4. Roast from both sides with the help of spatula. Smear ghee Or oil on both sides while frying.
5. Once you see the brown golden specks on both sides. Remove them and place them in a casserole Or keep them covered. Repeat the same with the rest of dough.
6. Serve hot with yogurt, raita, chutney, lentils, veggies etc.

- 2 cups spinach chopped
- 3 cups whole wheat flour ( I used organic wheat flour)
- 1 cup grated cottage cheese Or crumbs
- 1 tbsp cumin seed
- 1.5 tbsp white sesame seed (safed til)
- 100 gms thick yogurt
- 1 tbsp coriander seed powder (dhaniya powder)
- 1 tbsp garam masala powder
- 1 tbsp chat masala
- 1 t/s turmeric powder
- 1 tbsp fennel seed powder (saunf powder)
- 1 tbsp red chili powder
- 2 tbsp water to knead the dough
- a pinch of asofoetida (hing)
- 1 tbsp salt Or black salt
- 1 tbsp oil + 3 tbsp clarified butter (ghee) for frying parathas

I really love the look of these. I wonder if I can make them with coconut flour – it could be worth a try. I was wondering how you can grate cottage cheese when it is so soft?

Suzanne if cottage cheese is refrigerated you could grate them easily Or just mash them with your finger. Surely try them with coconut flour and lemme know how was it?
