Firstly peel raw bananas and slice them into thin rounds. As thin as you can you could use a readymade slicer which is used for cutting banana Or potatoes into thin rounds. Rub little salt and turmeric over the bananas. Allow them to rest for 5 mins.
Take a mixing bowl. Sift gram flour, cooking soda if using and salt. Also add asofoetida, chili powder, raw mango powder and cumin seed powder. Mix all nicely. Add water to it. Give a nice whisk ensuring there are no lumps in the batter. The batter should be nor too thick nor too thin. If batter is too dry add little water if it gets too thin add more gramflour. I prefer thick batter for fritters.
Put oil in a deep pan and place on high heat. Once oil is hot reduce the heat. Dip each sliced round of bananas into the batter evenly. Deep fry until crisp and golden brown from both sides. Repeat the same with rest of chopped bananas.
Remove excess oil from fritters with the help of slotted spoon. Place them on absorbent napkins to absorb excess oil. Serve fritters hot with tomato sauce and green chutney.
Notes for Raw Banana Fritters:
- Instead of raw bananas you could use aubergines, potatoes, onions etc.
- If you like it spicy add more red chili powder to your fritter batter.
- Also if you like some greens add few chopped coriander leaves.
- It’s important to heat the oil before frying else the impact won’t be good. Also please reduce the heat once oil is hot and fry fritters on medium/low heat else it won’t cook from within.
