Suran Chips Recipe, Elephant Foot Yam Chips Recipe | Suran Fry

Suran Chips are crispy, yummy and full of health benefits. This Suran Chips Recipe is made in Goan style. I have made exactly the same way as fish is fried in Goan. Even Bread Fruit (Nir Fanas) is fried the same way. If your family doesn’t love yam fry this style and see they would love this vegetable. We eat yam every week as it’s my hubby’s favorite fries post french fries.

Suran is also known as Elephant Foot Yam and belongs to tuber family. I remember eating suran chips made by mom as side dish along dal, sambar, etc. Yam vegetable is generally eaten my Maharashtrians, Goans and also eaten at Southern states of India.

Yam is excellent for our body and has some great health benefits. Yam has good amount of Vitamin B6 which is great for hair growth, helps is curbing hair greying. They are also known to have good source of energy, vitamins, minerals and Iron. They aid in digestion process, reduces constipation, helps in maintaining cholesterol, good for your heart, great for bones growth and are low glycemix index food so good for diabetic patients too. So yam is good do include them in your diet.

Suran are also great as skin packs. Boil yam, mash mix honey and apply to face and foot. Your skin would be hydrated and they are also known to reduce wrinkles and makes you skin soft and supple. I have tried and it really works.

The challenge is to slice the yam. You would require a sharp chopper or knife. I have sliced the yam as thin as I could slice. The yam is sticky so it needs something sour like tamarind and lemon juice. I have used vinegar which works very well with yam.


Suran Chips Recipe
This Suran Chips recipe is made with merely with five ingredients. All the ingredients are easily found in your kitchen. I have deep fried the yam, you could shallow fry them.

Let’s make step by step Suran Chips Recipe:

1. Peel off the outer layer of yam. Slice as thin as you could.

2. Mix red chili powder, turmeric powder, vinegar and salt. Combine all nicely. Marinate for 15-20 mins.

3. Spread semolina over a platter. Coat the marinated slices of suran.

4. Place a deep pan with oil. Once oil is hot deep fry the yam from both sides until golden brown and crisp. Don’t clutter with too many while frying, fry some at a time.

5. Place them over absorbent nakpins. Serve the suran chipshot  with sauce or chutney.

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 250 gms elephant foot yam (suran) peeled and thinly sliced
  • 1 tbsp turmeric (haldi)
  • 2 tbsp kashmiri red chili powder or 1 tbsp red chili powder
  • 1 tbsp vinegar
  • ½ cup semolina or more if required
  • salt as per taste
How to make the recipe?

Notes
1. You could shallow fry the yams.
2. Also lemon juice could be used instead of vinegar. I prefer vinegar for yams.
3. Ensure you fry them over medium heat.
4. It's important to use tangy juice like lemon, tamarind or vinegar as yam are sticky so this aids in removing the stickiness.
