Cluster Beans Foogath Recipe –Â with step by step instructions, also known as gavar foogath. Foogath recipe is made mainly from cluster beans / french beans, onion, coconut and green chilies. The sweet taste coming from the onion compliments the spicy taste coming from the green chilies. Further fresh grated coconut enhances the flavor and texture of this sabzi.
Cluster beans are known as as gawar/gavar in India. This foogath recipe comes from the goan region and I am eating this gawar sabzi since my childhood. My mom makes this dish quite often and is loved by folks in our house.
In Goa there are various kind of vegetables which are made in similar way. Foogath is made from cabbage, french beans, cluster beans, ivy gourd and also from mushrooms.
Very few ingredient’s goes in making gavar foogath recipe. Yet the taste is flavorful, mildly spiced and healthy to eat on a daily basis. The best part of this dish is the gawar is cooked in their own juices. Traditionally the sabzi is cooked with a lid consisting water. This process helps the vegetable not to dry and retain it’s moisture while cooking. I cook in both the ways by covering with a lid or by covering with a dish containing water and both the way perfectly suits me 🙂
Gawar sabzi goes well when teamed with roti, phulkas, parathas, dosas, neer dosa or as a side dish with rice. Sometimes I also club them with toasted bread and eat for breakfast.
Cluster beans foogath recipe card below:
- 1 tbsp coconut oil or any refined vegetable oil
- 250 gm cluster beans/gawar chopped finely
- 1/3rd cup finely chopped onion/ pyaz
- 1/4th cup chopped tomatoes/tamatar (optional)
- 1/4th cup fresh grated coconut/ nariyal
- 1 tbsp finely chopped green chilies/hari mirch
- 1/4th tsp turmeric powder/haldi (optional)
- salt as per taste
- Firstly keep all the veggies chopped and ready for the foogath recipe.
- Heat oil in the pan, once hot add the 1/4th cup chopped onion.
- Also add the green chilies.
- Keep stirring them.
- Saute the onion until they become translucent.
- Sprinkle the turmeric powder if using. Adding haldi powder is optional.
- If you are using tomatoes add 1/4th cup of tomatoes now.
- Saute the tomatoes until they appear tender.
- It’s time to add the 250 gm of chopped cluster beans.
- Finally add salt for seasoning.
- Stir all nicely.
- Cover with a lid and allow to cook.
- Alternatively you could cover with a lid containing water.
- Keep stirring the beans whichever way you cook them. Cook until the color and the texture of the cluster ebasn changes.
- In case they stick to the bottom just sprinkle some water and stir. Cluster beans take a longer time to cook atleast about 10-12 mins. Once they are cooked add the fresh grated coconut.
- Stir nicely.
- Cook for 2 mins more on low heat. Switch off the gas and serve gawar foogath with dal-rice, pulao or a side dish with any meal. Cluster beans foogath also goes well when paired with roti, phulkas or bread.

10. Finally add salt for seasoning.
12. Stir all nicely.
13. Cover with a lid and allow to cook.
14. Alternatively you could cover with a lid containing water.
15. Keep stirring the beans whichever way you cook them.
16. Cook until the color and the texture of the cluster beans changes.
17. In case the gawar sticks to the bottom just sprinkle some water and stir. Cluster beans take a longer time to cook atleast about 10-12 mins. Once they are cooked add the fresh grated coconut.
18. Stir nicely.
19. Cook for 2 mins more on low heat.
20. Switch off the gas they should appear like this when cooked.
Serve gawar foogath with dal-rice, pulao or a side dish with any meal. Cluster beans foogath also goes well when paired with roti, phulkas or bread.
