Instant Eggless Coffee Cake

This is my first try at Coffee Cake. I was actually starving to eat sweet. Also I didn’t wanted to wait for 1 hour for my cake to bake. So I thought of making this Instant Eggless Coffee Cake. It turned out to be yum and the texture was like a toffee. This Eggless Coffee Cake got over in jiffy minutes. Yummy delicious still craving for one. This Eggless Coffee Cake is between cake and cookie.

I feel I must have been a baker in my past life. As baking comes to me naturally also I am very passionate about baking. I feel proud of myself without any course or degree I cook and bake awesome. I am popular and famous in my own world. Let me not take you somewhere else.

Eggless Coffee Cake

Coming back to my Eggless Coffee Cake. It is simple to make with few ingredients. Even bachelors can try their hand. Recently have got a new hobby Food Photography. Though photography doesn’t comes naturally to me. I keep trying different angles, styles and presentations. Some shots are great but some are just… cant express in words.

Eggless Coffee Cake

This Coffee Cake is worth trying. Also great accompaniment with tea in evenings. Yeah keep in mind this coffee cake would serve only 3 people.

Eggless Coffee Cake

Total Time: 1.5 mins

Serves: 3 to 4 People

Ingredients:

  • 1 Microwave Coffee Mug
  • 2 tbsp Flour ( I have used 1 tbsp Wheat Flour + 1 tbsp Refined Flour)
  • 1 t/s Corn Flour
  • 1 tbsp Coffee Powder
  • 1 t/s Cocoa Powder
  • 1 t/s Baking Powder
  • 1 tbsp Icing Sugar Or as Sweetness required
  • 3 tbsp Butter
  • 2 tbsp Milk
  • 2 tbsp Choco Chips
  • A pinch of Salt

Method:

Grease the Coffee Mug and keep aside.

Take all dry ingredients in a mixing bowl. Sift all of them together.

Mow mix butter at room temperature. Add milk. Combine all of them with spoon.

Don’t over mix. Pour the batter into the greased Coffee Mug. Add choco chips on the top.

Microwave for about a minute on high power. Let it rest for 5 mins. Garnish with shavings of Chocolate. Serve Chilled Or hot.

Tip:

  1. Don’t over mix or over bake.
  2. You could top this cake with Hershey’s Chocolate Syrup.
  3. Also scoop some Ice cream on it and slurp it.

    I have a milk allergy. Can the milk be replaced with water or coffee?

    Since it has 3Tb of butter, I assume there is enough fat to keep it soft?

      Srishti you could replace with soy milk or almond milk or water. Hope this helps you.

    hi maria

    I wanted to make an instant recipe for cake and I was thrilled to find it in your blog and so i made. It came out soft and delicious and my hubby life it thats enough for me, but the coffee was a little bit less for me so next time i will put some more and thanks a ton for this recipe
