But this is my mother’s recipe which uses merely 2 ingredients yet flavorful and tasty. We have only used black pepper powder and salt for karela fries.

- Take sliced karela in a wide plate or bowl and sprinkle pepper powder and salt. Mix all nicely.
2. Heat oil in a deep pan.
3. Once the oil is hot add the bitter gourd. Place the heat on medium mode or there are chances they might get burnt.
4. Shallow fry the karela until they appear crisp and golden brown in color.
5. Remove them with a slotted spoon and serve karela fries warm with food.

- 1/2 cup oil for shallow frying
- 1 cup of thinly sliced karela (bittergourd)
- 1 tbsp pepper powder
- salt as per taste
