Simple, easy to make, healthy and instant Mushroom Pilaf Indian recipe…… make them any time of the day 😉 Mushroom Pilaf is made with Indian Spices and veggies which goes well with mushrooms. Pilaf is healthy, easy to make, cooks instantly and is great to have for lunch Or dinner.

Mushrooms are my favorite everyday I make something out of it. I have tried several dishes with mushrooms and all have turned out well. My hubby used to not like mushrooms but post marriage he also has started a liking for mushrooms.
This pilaf runs along the lines of biryani. However biryani is cooked on a dum whereas pilaf is cooked in pressure cooker which draws a line between them. Also I have used basmati rice which is a long grained rice which gives a nice impact to the pilaf. It’s quite confusing pilau, pulao and pilaf mean the same thing.
So let me share the pilaf with you guys quickly!
Let’s make Mushroom Pilaf recipe stepwise:
- Place the pressure cooker without the lid with clarified butter on a medium flame. Once it becomes hot add the whole ground spices (bayleaves, peppercorns, cinnamom, caraway seeds, cloves). Also add ginger-garlic paste.
2. Also add curry leaves little sea salt, onion, green chilies, cashewnuts and sugar. Saute until onion is golden brown in color.
3. Now add potatoes along with powdered spices from number 11 to 18. Stir all nicely.
4. Do add chopped french beans. Combine all nicely.
5. Add mushrooms and saute again. Finally add rice + water + bell pepper + greens of spring onion, soy sauce and sea salt for seasoning.
6. Cover with the lid and pressure cook until 3 whistles. Switch off the gas and allow the cooker to cool down. Serve hot with salad and raita
Mushroom Pilaf Recipe and the printable version below:
- 2 cup rice (300 gms)
- 1 packet of button mushrooms washed and chopped into big chunks
- 3 tbsp clarified butter (ghee)
- 2 bay leaf
- 5 to 6 cloves
- 1 inch cinnamon stick
- 1 tbsp caraway seeds (shahi jeera)
- 8 to 10 peppercorns
- 1 tbsp ginger-garlic paste
- ½ cup curry leaves
- 1 tbsp curry leaf powder
- 1 tbsp biryani masala
- 1 t/s turmeric powder
- 1 tbsp fennel seed powder
- 1 tbsp cumin seed powder
- 1 tbsp coriander seed powder (dhaniya)
- 1 tbsp red chili powder
- 1 tbsp garam masala powder
- 2 onion julienne
- 2 potatoes chopped into big chunks
- 14 to 16 cashewnuts
- 8 french beans chopped
- 1 tbsp dark soy sauce
- 2 green chilies chopped finely
- 1 cup chopped greens of spring onion (optional)
- ½ red pepper chopped into cubes (optional)
- sea salt as per taste
- 1 tbsp sugar
- 4.5 cups water for cooking

Thanks for your amazing recipes. Would like to know what is curry leaf powder. Is it the same as Karivepaaku Podi and is it necessary for this dish?
