Hariyali Paneer Tikka (Stovetop)

Simple yet flavorful and tasty is Hariyali Paneer tikka recipe. Hariyali means the green color of nature in Indian language. The green color comes from herbs and spices used to make the Indian green chutney.

I have made hariyali paneer tikka on stove top i.e pan fried. Alternatively you could grill or bake in the oven. We had ours with roti and veg pulav.

You could make these on skewers or without skewers. If making on skewers then arrange some veggies along paneer then fry. Otherwise fry paneer first then the veggies and assemble them altogether. Both taste good so make any way you prefer.

Generally hung curd is used but if you are allergic to dairy products then use cashew paste instead. Both ways I have had and they equally taste good, one cannot make out much difference.

This recipe mainly consist of coriander leaves, mint leaves, green chilies, ginger, garlic and small onion. Rest it consists of hung curd, gram flour and salt. Paneer is marinated in this exotic green combination and I bet nothing could be so green and tasty. Then you could fry them or bake them it’s upto you.

Let’s make Hariyal Paneer recipe stepwise:

1. Firstly slice paneer into long pieces with a width of 3/4th inch thick atleast.

2. Rinse the greens and place side.

3. Combine coriander leaves, mint leaves, onion, lime juice, chilies, roasted cumin powder, fennel seed, ginger and garlic. Also add sugar now if using.

4. Grind all with little water if required until smooth chutney is formed.

5. Now add gram flour, black salt, a tsp of oil and chat masala. Give a nice whisk as the mixture need to be smooth and lump free.

6. Coat paneer with this mixture. Repeat the same with the rest of paneer.

7. Marinate the paneer for 20 mins.

8. Also marinate capsicum, bell pepper and onion with this mixture for 20 mins.

9. Take a skewer and gently slide a onion first then a capsicum then a marinated cottage cheese until the skewer is left with no space.

10. Heat your grill pan or pan, drizzle some oil over it.

11. Once the oil is hot place 2 skewers and shallow fry them.

12. Once fried from one end, fry from reverse side until golden brown in color.

13. Fry and repeat the rest with other skewers.

14. Alternatively if you don’t wish to use skewer then just fry the paneer first then the veggies. Serve your hariyali paneer hot with green chutney and some lime wedges.

Baking or Grilling in Oven: I don’t have stepwise pic for this one.

  • Place the marinated paneer with skewer or without skewers on a greased pan.
  • Preheat the oven at 220ºC for 15 mins.
  • Drizzle some oil over the paneer. Grill or bake at 200ºC for 7-8 mins. Again check drizzle some drops of oil and bake for 4-5 mins more.
  • Serve your Hariyali Paneer hot with coriander chuytney or sauce.

  • 3 tbsp oil
  • 200-250 gm paneer (cottage cheese)
  • ½ cup of hung yogurt (hang yogurt into a linen cloth for 30 mins) dahi
  • ½ tsp roasted cumin powder (bhuna jeera)
  • 1 tsp fennel seed (saunf)
  • 1 tbsp garlic paste (lehsun)
  • 1 tbsp ginger paste (adrak)
  • 2 tbsp chopped onion (pyaz)
  • 1 cup chopped coriander leaves (dhaniya)
  • 3 green chilies (hari mirch)
  • ½ cup + 1 tbsp mint leaves (pudina pata)
  • 2 tbsp lime juice (nimbu ras)
  • ½ tsp sugar (optional)
  • 3 tbsp gram flour or as required (besan)
  • 1 bell pepper or capsicum cut into square (simla mirch)
  • 1 big sized onion chopped into square (pyaz)
  • black salt as required (kala namak)
  • chat masala as required
  • 6-7 skewer or as required
  • line or lemon wedges as required for garnish (optional)

Notes
1. The marination mixture has to be thick and not thin else the paneer won't be coated nicely. So add gram flour as required.
2. If you like them hot add more green chilies for making it spicy.
3. Instead of yogurt you could use cashew paste if you are allergic to dairy products.
