Kurkuri Bhindi (Okra Fry)

Kurkuri bhindi or bhindi fry – a crispy bhindi/okra recipe with step by step photos. This kurkuri bhindi goes well as a side dish with dal-rice, khichdi and pulao.

Kurkuri Bhindi (Okra Fry)

This recipe comes from my mom and she makes them quite regular. Our folks love bhindi in any form. Very few ingredient’s goes in making this recipe, yet so flavorful and tasty to eat.

I have a confession to make I used to not love bhindi before marriage however gradually developed liking for bhindi. All credit goes to my hubby who is an ardent fan of bhindi. Now I love bhindi in any form.

There are various version to make kurkure bhindi. Some add gram flour, some add rice flour, today’s recipe I have added corn flour. For seasoning have added roasted cumin powder, turmeric powder, chili powder and corn flour to this dish. So you get a balance of all flavors from the spices and seasoning in this okra fry recipe.

  • 250 gm okra/bhindi/lady finger
  • ½ tsp kashmirir red chili powder/red chili powder/lal mirch powder
  • ½ tsp turmeric powder/haldi
  • 1 tsp roasted cumin powder/jeera powder
  • 3 tbsp cornflour
  • ½ tsp chat masala (to sprinkle as garnish)
  • salt as per taste
How to make the recipe?
  1. Wash or rinse the 250 gms of okra/bhindi under running tap water. Wipe them with a clean kitchen towel or napkin. Ensure there is no moisture left on the bhindi.
  2. Slit them lengthwise or vertically into 2 pieces.
  3. Sprinkle ¼th tsp kashmiri red chili powder, ¼th tsp turmeric powder, 1 tsp roasted cumin powder and salt as per taste.
  4. Also add the 3 tbsp corn flour over the bhindi.
  5. Just use 2 spoon to mix the bhindi along the spice powders and corn flour. You could also mix them gently with your finger. Ensure the bhindi is nicely coated by the corn flour and spices mixture. Marinate for 2-3 mins.
  6. Shallow fry half of the marinated bhindi in hot oil.
  7. Keep stirring in between with a slotted spoon.
  8. Fry the bhindi until golden brown in color and crisp on medium heat.
  9. Similar way fry the rest of marinated okra until crisp. Place the shallow fried bhind over absorbent cloth or napkin to absorb excess oil.
  10. Lastly sprinkle chat masala over the fried okras. Just mix them gently. Serve your kurkure bhindi hot as a side dish with sambar-rice, khichdi or pulaos.
Notes
1. Ensure the oil is hot before shallow frying the bhindis.

2. You could also deep fry the bhindis but prefer shallow frying.

3. Adjust the spices and seasoning as per your taste and preference.

Let’s make Kurkuri Bhindi or Bhindi Fry recipe step by step:

    Tried this and it was a hit my family loved the bhindi and demanded for more… super recipe thanks for sharing I added some pepper powder too.
