Prawns green masala recipe is a semi dry gravy which goes well with pao (bread), roti and rice. The recipe credit goes to my sister in law and my hubby loves this dish. The best part of this recipe is you could cook the gravy until thick and dry or keep thin gravy.

The main ingredient which goes in the green gravy are coriander leaves, chilies, onion and prawns. You could use any size of prawn. Personally I prefer medium to small prawns as they taste more better than larger prawns in curries or gravies.

The only challenge to cook prawns are it could be easily over-cooked. Once prawns are over-cooked then they tend to taste rubbery. So the best way to cook prawns are on the last stage of cooking process. Once prawns change color that means they are cooked.

To add tang to this dish you could either add kokam / tomatoes / raw mango / tamarind pulp. I have used kokam which is also known as garcina indica. This prawns green masala recipe is tangy, spicy and mouth watering. Moreover you could make this dish simply with ingredients easily found in your kitchen.

Instead of prawns you could add fried chicken, paneer, tofu or mushrooms. You could also add any kind of small fish or fish fillet. If you are fond of eggs then add boiled eggs instead of prawns. The green base of this curry could be used for any ingredient and further you could explore and experiment.

Let’s make step by step Prawns Green Masala Recipe:

1. Wash the prawns and de-vein them.

2. Put some salt and allow to rest for 10 mins.

3. Meanwhile peel the potatoes an chop them into cubes. Immerse them in water with little salt else they would start darkening.

4. Grind all the ingredients for the green paste with little salt until smooth. Add little water if required. Don’t forget to add salt as it would help to retain it’s green color.

5. Take another pan with oil. Once oil is hot add half of the curry leaves.

6. Now add  onion  julienne with the rest of curry leaves.

7. Add some salt and sugar which would help the onion to caramelize faster.

8. Once the onion changes color add the grounded green paste.

9. Cook the paste for 2-3 mins and keep stirring. Also add turmeric powder and stir.

10. Time to add the potatoes.

11. Cover and cook until potatoes are cooked. If you want the gravy thicker and dry then cook until moisture evaporates. Add the prawns and cook for 1-2 mins.

12. Finally add kokam. Check the taste add salt if required as we had earlier marinated prawns with salt. So be careful while adding salt.

13. Cook for 2 mins more.

14. Switch off the gas and serve the prawns green masala curry with rice or pao.

For Green Paste:
  • 1 small onion (pyaz)
  • 1 inch ginger (adrak)
  • 3-4 garlic (lehsun)
  • ½ cup chopped coriander leaves (dhaniya)
  • 2-3 green chilies (mirchi)
  • 1 tbsp water if required
  • a pinch of salt
For curry:
  • 1.5 tbsp oil
  • 20-22 medium sized prawns (de-shelled and de-veined) (jhinga)
  • 1 medium sized onion chopped into julienne (pyaz)
  • 12-14 curry leaves (kadi patta)
  • 1 medium sized potato peeled and chopped into cubes (optional) (aloo)
  • 3-4 garcinia indica (kokam) / 1 tomato / 1 tbsp tamarind pulp
  • 1 t/s sugar
  • 1 t/s turmeric powder (haldi)
  • salt as per taste
How to make the recipe?

Notes
1. You could use any of these ingredients either tomato / tamarind pulp/ raw mango to make the curry tangy.
2. If you like more hot and spicy then add more green chilies.
3. Add salt carefully as we have marinated prawns with salt.
