Purple Yam Fries (vegan)

Easy Purple Yam Fries Recipe is healthy at the same time simple to make. They are any day better than french fries or any other fries. Purple yam is also known as Dioscorea alata scientifically and Kand In India. Kand is eaten a lot by the people, adivasis living in the forest area or villages also people like me eat. They are also eaten during fast in India.

What is purple yam or kand?? Very few people are aware about this vegetable. It belongs to the tuber family just a root vegetable similar to a sweet potato, potato, yam or colocasia. Their color varies from dark purple to lavender. Any purple color veggies like brinjal, purple yam, purple cabbage, beetroot, berries are great for your heart and health. It’s good for you so do include them in your diet. Mostly kand is eaten in Gujarat-India. This is how it looks check the below picture for more clarity.

What recipes could be made from purple yam??? Recipes like Undhiyo, fried, vegetable, steamed, handvo, fritters, desserts, kheer etc could be made from kand. You could be innovative and make sandwiches or use their purple color to highlight your dish.

Benefits of purple yam – Excellent source of fiber and nutrients. They are good for building your immune system stronger, good for heart. They are low in fat and proteins. Eating purple yams are great for your development and growth of your body. They are the most nutritious amongst the tuber family.

Somehow I love this root vegetable a lot. You don’t get them in Pune easily. You get them at Shivaji Market – Pune but quite expensive. My mother had got a kilo of kand from Mumbai. We eat purple yam fries in many ways but this recipe is the one loved most at our place hence sharing them with everyone 😉

Let’s make purple yam fries step by step:

1. Peel the kand, chop them into slices and immerse them in water covering them with salt for 15-20 mins. Remove and place them on absorbent napkin.

2. Heat oil in a shallow pan. Once oil is nicely heated put some of the sliced kand.

3. Shallow fry until golden brown from both sides. Place them on absorbent nakpin to absorb excess oil if any.

4. Sprinkle chat masala and roasted cumin powder. Serve your purple yam fries with your favorite dipping, sauce or chutney.

Ingredients
  • 500 gms purple yam (kand)
  • 2-3 tbsp oil for shallow frying
  • 3 cups water
  • 1 tbsp roasted cumin powder (jeera powder)
  • 1 tbsp chat masala
  • 1 tsp pepper powder[b] (optional)[/b] (kalimirch powder)
  • salt as required
Instructions

    Kand Recipe Kund & Prawn

    Ingredients:
    Kand- 750 grams cleaned and cubed 1/4 inches pieces.
    Peanuts- 200 gms shelled,skinned and rough pound.
    Green Chillies-one or two depending on spiciness.
    Prawns -Medium sized 7-9 pieces. legs,head above eyes and butterfly tail removed and deveined.
    Grated Fresh Coconut- a Fistful.
    Lemon Juice- To mix in the final preparation.
    Jeera- Tsp(rough crushed).
    Method
    In a cooking vessel heat oil or ghee.Then put shelled ,rough crushed raw, skinned peanut in the vessel with green chillies and whole or crushed cumin seed .To this we add prawns that have been deveined,legs removed,head chopped just below the eyes but not shelled as the flavour of the shell and lower head that houses the roe adds fragrance to the preparation .Then put in the soft pressure cooked cubes of Kund and stir well.Add a little water in the food mix,put a lid and simmer by putting water on top of the lid to avoiding sticking to the bottom.After fifteen or twenty minutes open the lid ,take the vessel off the fire check if the kund is softer than before and stir as well.If done sprinkle salt and add freshly squzeed lime juice and mix.Finally put a generous handful of fresh grated coconut and give a final simmer as explained earlier.Thankyou.
