How to make Masala Rice (Quick & Easy)

Masala Rice Recipe – A quick masala rice recipe made with leftover rice, veggies and spices. This dish goes well as a quick meal, lunch in tiffin or even as a brunch. Just serve some papad, pickle, salad along the stir fried rice and your meal is sorted 🙂

How to make Masala Rice (Quick & Easy)

We have used onion, tomatoes, potatoes and herbs for this recipe. You could use your choice of veggies like carrots, aubergines etc. If you happen to use onion in your stir fries or dals always caramelize the onion as it gives a great flavor and taste to your recipe.

The recipe for fried rice comes from my mother’s treasure bank. We love making stir fries as they are quick, simple and convenient. I have already posted on our food blog mushroom stir fry, five spiced stir fry rice, mushroom stir fried rice, egg stir fried rice and veg stir fried rice.

Masala Rice Recipe

You could use any leftover rice like kolam, parimal, basmati etc. The rice used for this recipe is wada kolam rice. Also, the potatoes which are used are boiled as that would take lesser time to cook. If you don’t have boiled potatoes then don’t worry just slice them and fry before making the rice.

  1. Keep all the ingredient’s handy for the recipe.

2. Add butter or oil to the hot pan.

3. Put cumin seed and saute.

4. Add curry leaves.

5. Once they crackle add thinly sliced onion.

6. Also, add green chilies.

7. Add salt and mix well.

8. Saute onion until they change color to pale light brown in color. Ensure the heat is on low to medium mode.

9. Put the chopped tomatoes and mix nicely.

10. Add all the spice powders.

11. Just add half of coriander leaves along mint leaves. Mix all nicely.

12. Time to add the boiled potatoes.

13. Cover and cook for 2 minutes. If the mixture is dried then do add a little water.

14. Remove the lid.

15. Add the rest of coriander leaves and stir nicely.

16. Lastly, add rice and stir.

17. Mix all nicely the rice should look even colorwise.

18. Once they are combined nicely switch off the gas. You could add lime juice now if using. I haven’t added as lime weren’t there.

Serve your masala rice with lime wedges, papad, pickle and french fries.

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 2 cup steamed rice
  • ¼ cup chopped boiled potatoes
  • 1.5 tbsp clarified butter or oil
  • 10-12 curry leaves
  • a pinch of asafoetida
  • 1 tsp turmeric powder
  • 1 tbsp kashmiri red chili powder
  • 1 tsp cumin seed
  • 1 tsp garam masala powder
  • 3-4 green chilies slit from center
  • ½ cup onion julienne
  • ¼ th cup chopped tomatoes
  • 2 tbsp chopped coriander leaves
  • 1 tbsp chopped mint leaves
  • 1 tbsp lime juice
  • salt as per taste
How to make the recipe?

  16. Lastly, add rice and stir.
  17. Mix all nicely the rice should look even colorwise.
  18. Once they are combined nicely switch off the gas. You could add lime juice now if using. I haven't added as lime weren't there.
  19. Serve your stir fried rice with lime wedges, papad, pickle and french fries.
Notes
1. The heat should be from low to medium while making stir fried rice.
2. If you do not have boiled potatoes then shallow fry them before adding to this recipe.
3. Adding lime juice is optional but it gives a good tangy taste to this rice.
