Eggless Blueberry cake recipe with coconut is egg free, dairy free yet soft, delicious, smooth textured and tempting cake. More than Eggless Cake its also a vegan blueberry cake recipe. In fact I had made this cake two days back and got over in 2 hours when it was known to people in my house (:
I just go to eat one slice of this eggless blueberry coconut cake. Rest was eaten by my friends. They have asked me to make this cake again. So I will make Eggless Blueberry cake again but during Christmas. My sis had given me this wild Blueberries spread. In India you don’t get blueberries easily so I thought of mixing blueberries with coconut. I wasn’t sure how the combination would taste but it was terrific!

What I love right now is baking cakes may be I might get into decoration and wedding cakes in future.
Kids are gonna love this cake as desiccated coconut + coconut oil gives a great flavor and aroma to the cake. My house was full of coconut aroma which just increases your hunger pangs 😉

Let’s make step by step Eggless Blueberry Cake Recipe:
1. Preheat oven at 200°C for twenty mins before baking. Grease the pan with oil and dust some flour on it. Keep it aside.
2. You could use fresh coconut milk however I was not having fresh coconut. So I have added desiccated coconut to hot boiling water. Allowed to rest for 10 mins. Then grind this mixture into a processor until smooth. Keep this aside.
4. Cream oil and sugar until they mix well.
5. Now mix some dry ingredients and some coconut milk alternatively. Start with flour and end with flour. Fold this mixture nicely. It should be lump free and smooth.
6. Now add cashew nuts and vanilla essence if using. Fold the mixture again. Pour half batter into the greased pan. Sprinkle some desiccated coconut and some blueberries.
7. Gently pour the rest of batter. Again sprinkle some blueberries and lastly top with rest of desiccated coconut flakes.
8. Bake at 170°C for 30-35 mins Or until the skewer comes out clean from center-bottom. Allow the cake to cool down for 30 to 40 mins. Gently unmould the cake and serve Eggless Blueberry Cake hot Or chilled.
Eggless Blueberry Cake Recipe below:
- 3 tbsp desiccated coconut + 6 tbsp hot water Or 70 ml coconut milk
- 3 tbsp desiccated coconut flakes
- 175 gms flour ( half wheat lour and half refined flour)
- 60 ml coconut oil
- 80 gms caster sugar
- 1 tbsp vanilla powder Or essence
- some dried / frozen/ canned/ fresh blueberries
- 8 to 10 cashewnuts crushed Or chopped
- 1 tbsp baking powder
- 1 t/s salt
- 1 tbsp corn flour
