If you have any left- over veggies or any favorite vegetable just add them and toast. We generally make a lot of toast sandwiches and aloo toast tops in our house.

Aloo Toast Sandwich (Easy & Step by Step)

Generally, make for hubby as breakfast or quick meal. Make your favorite aloo sabzi and use them as stuffing for the sandwich. Then layer with tomatoes, beetroot, cucumber, capsicum, cabbage etc and toast or grill them.

Earlier have posted mumbai masala aloo toast sandwich and spinach all toast. Mashed potatoes are a common factor in most of the sandwiches I make aloo being my favorite vegetable.

Green chutney goes great with any sandwiches. So make green chutney of your choice or follow the recipe. Any dry aloo sabzi would be fine or mashed potatoes also would be fine.
