This easy sweet corn soup recipe  is great to have in winter and rainy season. Corn has been my favorite since childhood. They are also called here as Bhutte, Makai, Maize etc in India. This soup was always made by my sister. I love this soup since my childhood. Even my pet loves it. The soup is amazing and I just love to make this soup. Moreover its a simple dish even bachelors can make them without being hassled. Accompany soup with some cheesy garlic bread and you will love it all the more.

I have used American sweet corn but you can use any kind of corn. Sweet Corn soup is delicious at the same time nutritious and healthy. You could use low fat butter and skimmed milk for low calories.

I don’t have much words to express. You make this Easy Corn Soup and you will know how it is! You can have this Easy Corn Soup as a breakfast, brunch or dinner Or even as a starter. You could find more corn recipes on this link Corn Pakora Recipe. 

Corn is a versatile ingredient you could make lot of dishes with it. Like corn soup, corn fritters, corn dosas, corn parathas, corn samosas, corn bhel, corn chat, corn curry, corn pulao etc…. Once I had made corn spinach curry which was quite spicy and tasty. Lovely curry to eat during winter’s.

I have added some fresh herbs from garden like thyme, oregano, marjoram and basil leaves. For garnish I have used parsley. But if these herb’s aren’t available then use chives or greens or spring onion or even dried herbs would do. For adding some spice added freshly grounded black pepper and some red chili flakes for some heat.

Let’s make sweet corn soup recipe stepwise:

1. Use steamed or boiled corn. If you are using whole Maize boil and then scrape the corn with the help of knife.

2. Make paste of half corn and keep the rest of boiled corn kernel as it is.

3. Take a pan add butter or olive oil.

4. Add chopped garlic. Saute it for a minute on low flame.

5. Now add the the corn paste and also the boiled sweet corn kernel.

6. Saute for 2 mins.

7. Now add vegetable stock or water. I used the same stock in which I boiled sweet corn.

8. Add all the herbs if using at this time.

9. Pour milk add pepper powder and salt. Now add cornflour-water paste. Keep stirring the soup.

10. The corn-soup will thicken after adding milk and corn flour.

11. Simmer until it thicken a little if it’s too thick then add little more stock or water.

12. Remove from gas your easy corn soup is ready. Garnish with parsley and sprinkle some red chili flakes and pepper powder on top. Serve your hot sweet corn soup with Garlic bread.

recipeIngredient (used american measuring cup, 1 cup = 250 ml)
  • 2 cups boiled american sweet corn
  • 2 cups milk or as required
  • 2 tbsp water + 2 tbsp corn flour (mix as paste)
  • 1 cup vegetable stock or water
  • 2 tbsp butter or olive oil (i used salted butter)
  • 8-10 garlic cloves chopped
  • 1 tbsp crushed black pepper powder
  • salt as per taste
  • 1 tbsp basil leaves chopped finely (optional)
  • 1 tsp fresh or dried oregano (optional)
  • 1 tsp fresh marjoram (optional)
  • 1-2 fresh thyme twigs (optional)
  • 2 tbsp chopped greens of spring onion (optional)
  • 1-2 parsley twigs for garnish (optional)
How to make the recipe?

Notes
1. Use any herbs of your choice even dried herbs would do and adding them are optional.
2. If you don't have vegetable stock add water instead. I used the same stock which I boiled my sweetcorn.
3. I used salted butter so didn't add salt so add them accordingly.
4. You could add some cheese over top.
5. Add red chili flakes towards the end.
6. Preferably this soup tastes great with butter but you could use oil instead.
