Mushroom Grilled Cheese Sandwich Recipe | Stepwise

Mushroom Grilled Cheese Sandwich recipe is a healthy, yummy snack option for kid and adults. I have stir fried mushrooms with tomatoes, for a base of sandwich made mashed potatoes and topped with cheese. Later you could toast them or grill them. I had my mushroom grilled cheese sandwiches for lunch.

This mushroom grilled cheese sandwich recipe is easy and could be made anytime during the day. The filling of the sandwich could be made in advance. If you are calorie conscious person then you could skip cheese and use low fat cheese instead. If you are fond of paneer (cottage cheese) then add them instead of cheese. Also you could add any cheese of your choice. I have used grated cheddar cheese for this sandwich.

This recipe is my own version and imagination of how I would like to eat my sandwich with mushrooms. I love mashed potatoes, cheese and tomatoes. So added them all with herbs and spices to make it more tasty and healthy too. I love the Mumbai vendors who make toast sandwiches over the stove served with chutney and sauce. In short I love sandwiches made in a healthy and yummy way.

I love mushrooms hence tried various recipes from mushrooms. You could try some like mushroom vindaloo,  mushroom potato, mushroom chili goan, mushroom duxelle, mushroom pasta bake, mushroom gnocchi, goan mushroom cutlet and mushroom cafreal.

Mushroom Grilled Cheese Sandwich Recipe

Coming back to our mushroom grilled cheese sandwich recipe. If you don’t have an electric sandwich maker, don’t worry make them on normal toaster or just toast the bread, stuff the filling, top with cheese and fry them on a deep pan.

Let’s make step by step Mushroom Grilled Cheese Sandwich Recipe :

1. Place tomatoes on gas cob or fire for 2-3 mins until it turns slightly brown all over. Repeat the same with the other tomato. Allow to cool and remove the skin, chop them.

2. Wash, clean and chop the mushrooms. Take a cup of water in a pan add chopped mushrooms.

3. Place on medium heat and cook the mushroom for 2-3 mins.

4. Strain the water and reserve for later use.

5. Take another pan add oil or butter. Saute chopped garlic and ginger for 1-2 mins.

6. Now add chopped onion and saute until light brown in color.

7. Add the chopped tomatoes, sugar and chilies. Saute until tomatoes are cooked and tender.

8. Time to add coriander leaves.

9. Add the boiled mushroom.

10. Cook until the mixture gets dry and is cooked properly.

11. Apply butter over bread, spread mashed potatoes over the base. Spread the mushroom-tomato stuffing enough to cover the bread. Finally cover with grated cheese or slice of cheese. Toast, grill or make in a sandwich maker until golden brown in color. I don’t have a pic for this one.

12. Serve the mushroom grilled sandwich hot with green chutney, tomato sauce and not to forget some cheesy wafers.

  • 1 tbsp oil or butter
  • 8 bread or whole wheat bread or any kind of slice bread
  • 1 packet of button mushrooms chopped
  • 2 tomatoes
  • 4-5 garlic cloves
  • ½ inch ginger chopped finely
  • 1 onion chopped finely
  • 1 or 2 green chilies chopped finely
  • ¼th cup coriander leaves chopped finely
  • ½ t/s garam masala powder
  • 3 medium sized potatoes boiled, peeled and mashed
  • 1 cup grated cheese of any kind or cheese slices
  • ½ tbsp pepper (optional)
  • 1 cup water
  • 1 tbsp sugar
  • 2 tbsp butter to apply over bread
  • salt as required
How to make the recipe?

Notes
1. You could spread some lettuce or spinach leaves for the base instead of mashed potatoes.
2. If you are not fond of cheese then add some cottage cheese (paneer)
3. For variation you could add boiled peas with the mushrooms.
4. I have used coriander leaves you could use any herb like cilantro, basil etc.
