Eggless Blueberry Cookies – prepared with blueberries, all-purpose flour, powdered sugar and butter. They are quite addictive had made few batches for my friends and family. All got over soon and everyone relished them. These are egg-free hence great for people who are allergic to eggs or vegetarian.
I have adapted and heavily modified this recipe from my Shrewsbury’s cookies recipe. To add some crunch have added rice flour. Further have added some pink color to part of the dough so they look colorful and attractive. Adding color is optional.
I have used packed blueberries as you don’t get fresh ones here. If you have fresh blueberries then use them. I have used butter but you could use clarified butter or white butter.
These eggless blueberry cookies could be distributed as cookies or make them for a cocktail or birthday party. Kids would love them and they could be a huge hit. You could make the dough in advance and freeze them. Thaw them before making and give any shape you desire. I have used a round cutter you could use flower cutter or just make them as normal cookie shaping round with your hand.
In fact, if you have kids around ask them to shape for you. As that would be a fun factor for them and also something new to learn 😉
Let’s make Eggless Blueberry Cookies recipe step by step:
1. Sift all the dry ingredient’s and place aside.
2. In a mixing bowl take butter.
3. Add powdered sugar now cream both until they look soft and fluffy.
4. Time to fold the sifted flour. Add vanilla essence and milk.
5. Finally, add blueberries and gently fold.
6. Cover with a cling film and shape into a log. Freeze the dough for 15-20 mins.
7. If you wish you could also divide the dough into 2 parts add a little color to one dough. Freeze them separately. Remove them now you could slice them with a knife or give them shape.
8. Dust some flour roll them with a pin roller and give shapes with cookie cutter.
9. Place the cookies leaving some space from each other in the greased pan.
10. Preheat the oven for 10-15 mins prior baking at 170ºC. Bake the cookies at 170ºC for 16-18 mins or once the edges become pale brown.
11. Allow them to cool to room temperature then store them into an air-tight container. Serve your blueberry cookies with  tea or coffee.
