Eggless Ghee Cookies (Step by Step)

Eggless Ghee Cookies Recipe with step by step photos. This ghee cookies are made with whole (atta) wheat flour, refined flour, powdered sugar, ghee and ginger powder. They melt in your mouth and also at the same time much healthier cookies. Just thought of making these as christmas is around the corner and make something healthy 😉 for family, friend and readers.

Eggless Ghee Cookies (Step by Step)

I have added rice flour too for adding crispy flavor in the cookies. The biggest compliment came from my sister that these cookies tasted like the ones you get them in pune bakeries 🙂 No boasting but my family loved them my parents finished these cookies. In-fact I only got to taste one rest all is over (: but no worries will make them soon.

Mainly when you make from wheat flour anything they taste dense and don’t appear airy and light. But on contrary all purpose flour (maida) biscuits turn out airy and light. So it was a big challenge to make wheat biscuits taste like the normal ones. I have added maida but in small proportion. But the secret ingredient to this recipe is rice flour yes its not healthy like wheat but atleast it’s better than maida right?

I have used clarified butter as shortening agent to the cookies. But you could use plain butter I prefer ghee so used the same. After staying in Pune my love for bakery products is just rising I usually taste and make them home. Sometimes it’s win win sometimes they turn out to be a disaster but that’s how its should be.

Eggless Ghee Cookies Recipe

Let’s make ghee cookies recipe with wheat flour in stepwise directions:

  1. Sift all purpose flour, rice flour, whole wheat flour, baking powder, cooking soda, salt if using, dry ginger powder and nutmeg powder.

2. Take ghee at room temperature in a mixing bowl.

3. Add the 1/4th cup powered sugar and start beating manually or with the help of beater.

4. Beat until they appear light and fluffy.

5. Now fold the sifted dry ingredient’s into batches of two.

6. Once the first batch combines well.

7. Then add the next batch of sifted dry ingredient’s.

8. Start mixing after sometime the mixture would be difficult to fold. No worries start using your hand and mix gently.

9. Add milk and start mixing gently again.

10. The dough should look like this please don’t over-mix the dough. Also just mix there is no need to knead the dough. Cover with a cling film and refrigerate for 15 mins.

11. Remove and uncover the dough.

12. Start shaping into small marble sized balls. Place them over-greased tray or dish.

13. Now you could gently press the center with your thumb or use a cookie cutter. I have used peda stamper or peda moulds.

14. Preheat oven for 15 mins at 180ºC  and bake at 180ºC for 15-16 mins or until teh cookies change their color towards the edges.

15. Allow to cool and then store them into an air-tight container. Serve your ghee cookies with chai or coffee.

Easy Eggless Butter Cookies Recipe - made with whole (atta) wheat flour, refined flour, powdered sugar, ghee and ginger powder.

  • 100 gm whole wheat flour / atta (i used organic wheat flour)
  • ¼th cup powdered sugar or as required
  • 50 gm all purpose flour
  • 50 gm rice flour
  • 80 gms clarified butter (ghee)
  • ½ tsp dry ginger powder
  • a pinch of nutmeg powder
  • ¼th tsp baking powder
  • ¼th tsp cooking soda
  • 2 tbsp milk
  • a pinch of salt
How to make the recipe?
  1. Sift all purpose flour, rice flour, whole wheat flour, baking powder, cooking soda, salt if using, dry ginger powder and nutmeg powder.
  2. Take ghee at room temperature in a mixing bowl.
  3. Add the powered sugar and start beating until they appear light and fluffy.
  4. Now fold the sifted dry ingredient's into batches of two.

  6. Then add the next batch of sifted dry ingredient's.
  7. Start mixing after sometime the mixture would be difficult to fold. No worries start using your hand and mix gently.
  8. Add milk and start mixing gently again.

Notes
1.Don't over-bake or under-bake these cookies.
2.You could add cinnamon or cardamom powder or even vanilla essence instead of ginger powder.
3.These are ghee cookies so adding ghee is mandate but you could try adding butter.

    Can I try baking in pressure cooker?

      Madhuri you can try baking in the pressure cooker. Just ensure you remove the rubber from the lid and place sea salt or sand towards the base of the cooker. Place a stand and keep the baking tray or tin over it then pressure cook. Hope this information helps you, let us know how the cookies were?
