Mixed Sprouts Biryani recipe – is full of flavor, aroma and taste! Once in a week, we always eat sprouts back home. This time, I thought of making something unique with it hence made mixed sprouts recipe Indian style. I also added some  veggies like carrots, tomatoes and potatoes. You could add veggies like mushrooms, baby corn, bell peppers, tofu etc. I have tried Hyderabadi Chicken Biryani and it tastes yum

This biryani is made without any yogurt good for vegans. However, I have used clarified butter at the end so vegan friends could skip that part. Also added some healthy seeds like flaxseed paste, sesame seed paste, nigella seeds, poppy seeds and coconut.

I had made this specially for my hubby. Towards evening, I realized we had to go to visit his office mate. So I carried the Sprouts Biryani to their home and asked them not to cook as I didn’t want my effort to go in waste. Fortunately, everyone loved the biryani and it got over 🙂 kids and family everyone ate it. Only my hubby stated if I had added some prawns Or chicken it would have tasted more better 😉 that’s my dear hubby!

More Or less we all have people back home who are fussy about food. Some like only nonveg food, some like only veg food, some like junk food, some like only fried snack, some like super oily stuff, some like extra healthy stuff. Sometimes it becomes difficult for the lady of the house to manage and cook something which everyone can eat. Only a woman can deal with such challenges and come out successfully 😉

Sprouts are great for health use them in salads, curries, vegetables, soups, etc. In India people also make Sprouts Bhel which is quite healthy chat option. How to make mixed sprouts biryani:

1. It’s important you precook the rice until half boiled. You can parboil them in the oven, pressure cooker Or vessel. Strain the water and keep the rice aside. Combine all the ingredients for the paste with little water. Grind until a smooth paste is formed. Place it aside.

2. Take a pan Or vessel in which you wanna cook biryani. Add oil / ghee and place on high heat. Reduce heat once the pan is hot add caraway seeds, bay leaves, cloves, peppercorns, cardamoms and star anise. Saute until they leave nice aroma.

3. Time to add onion saute until they are dark brown in color.

4. Add the green paste and saute until they bubble.

5. Put all powdered spices like garam masala powder, turmeric, coriander seed powder and red chili powder and biryani masala powder.

6. Now add chopped potatoes and give a nice stir.

7. Add the cooked sprouts and salt for seasoning. Mix all nicely. Put a cup of water.

8. Lastly add parboiled rice and spread over the gravy. Sprinkle some mint leaves over it and pour some ghee over it.

9. Cover with a lid placing a heavy object over it Or cook in pan with a glass lid. Cook on low heat for 20-25 mins.

10. Garnish biryani with some fried curry leaves, fried raisins and cashew nuts. Serve the sprouts biryani hot along with yogurt raita.

Healthy Mixed Sprouts Biryani recipe for vegetarian friends full of flavor, aroma and taste!
Ingredients
  • 1.5 tbsp oil Or clarified butter (ghee) + little extra while layering biryani
  • 250 gms basmati rice of good brand parboiled (I used organic basmati rice)
  • 2 cinnamon sticks
  • 2 to 3 bay leaves
  • 2 to 3 green cardamoms
  • 2 black / brown cardamom
  • 1 tbsp caraway seed (shahi jeera)
  • 4 to 5 cloves
  • 8 to 10 peppercorn
  • 1 star anise
  • 2 onion julienne
  • 1 tbsp biryani masala powder of any good brand (I used shaan biryani masala)
  • 1 tbsp red chili powder
  • 1 tbsp garam masala powder
  • 1 t/s turmeric powder
  • 1 t/s coriander seed powder
  • 1 medium sized potato
  • 350 gms mixed sprouts boiled Or cooked until tender
  • few mint leaves
  • salt as per taste
  • 1 cup water
  • few fried curry leaves, fried raisins and cashew nuts for garnish (optional)
  • [b]For the paste[/b]:
  • 2 tomatoes chopped
  • 2 carrots chopped
  • 1/2 onion chopped
  • 1 t/s nigella seeds
  • 1 tbsp charoli / chiraunji
  • 1 tbsp flax seed
  • 1 tbsp white sesame seeds
  • 1 t/s black sesame seeds
  • 2 tbsp fresh grated coconut
  • 1 tbsp poppy seeds
  • 1 cup chopped coriander leaves
  • 1 green chili
  • 8 to 9 mint leaves
  • 2 tbsp water

Notes
1. You could use any vegetable you like for this biryani.[br]2. Nonvegetarian could use chicken, fish etc.[br]3. I haven’t used yogurt but if you wish to add yogurt instead of the seed paste.[br]4. Do a potato test before you switch off the gas. If the knife goes through a potato that means it’s cooked.

    with all the nuts and seeds in the biryani and the sprouts too, this is one healthy biryani recipe.
