Mumbai Veg Sandwich is one of my favorite menu to order in any restaurant. I remember always ordering for toast sandwiches, cheese toast sandwiches at any kind of restaurant. My friends used to tease me saying no point for me to check the restaurant menu as I am gonna order sandwiches ;)….. Have always loved sandwiches be it any kind in-fact I could even eat them during meals or anytime of the day.
The recipe for Mumbai veg sandwich recipe is easy to make. You only have to prepare the green chutney, sandwich masala and slice the veggies. Rest is all assembling and you got to be quick else they tend to get soggy quickly.
You get to see various kind of sandwiches sold on the Mumbai streets. Some are veg grilled sandwich, cheese toast sandwich, chocolate toast sandwich, mumbai masala toast sandwich, whole wheat sandwiches, club sandwich etc. My personal favorite is mumbai masala toast sandwich during monsoon and winter. Otherwise I am alright with any filling in sandwiches. At times when I am hungry and have no time them I make quickly sandwiches for me.
I remember during my college days we all used to binge on roadside sandwiches. We used to also treat our friends on uncalled occasion’s used to be great fun then. It’s more fun to make sandwiches home as its hygienic and make them as much as you want.
I have made the sandwich masala at home also posted the recipe. If you are too lazy to make them home then you could buy sandwich masala from the store. Although I prefer to make them home and also provided the recipe below.
If you are a sandwich lover like me then do check corn cheese chily toast, mashed potatoes sandwich with spinach, mushroom grilled sandwich, mumbai masala toast, paneer toast sandwich, chicken toasted sandwich and mushrooms on toast.
Let’s make veg sandwich recipe step by step:
1. For the sandwich masala take a pan roast peppercorn, cumin and fennel for 1- 2 mins on low heat. Switch off the gas add amchur powder, black salt and chat masala while the pan is still warm. Once spices cool down justdry grind until fine powder is formed. Store them into an airtight container you could also place them in the fridge for longer storage.
2. Grind all the ingredients for the green chutney until smooth. Add little water if required but don’t add too much water. As the chutney should have a thicker consistency not too thin else your bread would get soggy soon.
3. Slice all the veggies and keep handy.
4. Take a chopping board and chop the thick egdes of the bread gently.
5. Now apply butter to all the bread slices.
6. Apply green chutney to one side of the bread or you could apply both the sides. One side is better if packing for lunch boxes the bread won’t get soggy.
7. Spread some cucumber slices around 8-10 on the bread.
8. Now add 1-2 onion slices. Sprinkle some sandwich masala over them.
9. Place 3-4 potato slices and sprinkle the sandwich masala again.
10. Keep 1-2 beetroot slices over it. I don’t have a pic for this one as my fingers were already red with beetroot so no picture.
11. Top with 4-5 tomatoes. Again sprinkle some sandwich masala and chat masala.
12. Cover with another buttered slice of bread. Repeat the same with the rest of bread. Slice into squares or triangles. Apply some butter and chutney over the sandwich. Your Mumbai veg sandwich is ready. Serve veg sandwich with chutney and some sauce. Store the left over green chutney back into the fridge for further use.

- 1/4th cup cumin seed (jeera)
- 2 tbsp fennel seed (optional)
- 2 tbsp peppercorn (kalimiri)
- 1.5 tbsp dry mango powder (amchur)
- black salt as per taste
- 1 tbsp chat masala
- [b]For the spicy green (teekha) chutney:[/b]
- 2 tbsp water
- 1 cup of mint leaves (pudina)
- 2 cup of coriander leaves (dhaniya)
- 3-4 green chilies or as required (hari mirch)
- 1 small onion chopped
- 1 tbsp lemon juice
- 2-3 garlic cloves (optional)
- 1 t/s sugar
- 1 t/s roasted cumin powder
- black salt as required
- [b]For the veg sandwich:[/b]
- 6 slices bread (plain, whole wheat)
- 1-2 cucumber peeled and sliced into thin rounds
- 1 medium sized onion peeled and sliced into thin rounds
- 1 medium sized beetroot boiled and sliced into thin rounds
- 1 -2 medium sized potatoes boiled, peeled and sliced into rounds
- 1-2 tomato sliced into thin rounds
- 6 tsp of green chutney
- butter as required
- sandwich masala as required
- chat masala (optional)
- tomato ketchup / sauce as required
